Butterfly Cupcakes

2 1/2 cups self raising flour
1 cup caster sugar (super fine sugar)
150g (5 oz) softened butter
1 cup milk
3 eggs at room temperature
Finely grated zest of 1 lemon (optional)
1 teaspoon vanilla extract

Pre heat the
oven to 180C (356F) Line two 12 hole cupcake pans with paper cases. |

Sift the 2 1/2 cups of self raising flour into a large mixing bowl. |

Add 1 cup of sugar. |

Cut the 150g (5 oz) of butter into cubes. |

And add to the bowl. |

Add 1 cup of milk. |

Add 1 teaspoon of vanilla extract. |

Add the
grated lemon rind, if you are using it. Tip You might want to ask Mum or Dad to help grate the rind. |

Crack the eggs one at a time into a small bowl, and remove any pieces of egg shell before adding the eggs to the flour mix. |

Hint If you do need to take out any egg shells use a large piece of egg shell to scoup out the smaller pieces. This is easier than using your fingers or a spoon. |

Using
an
electric beater, beat at low speed for about 30 seconds or until combined. (Ask Mum or Dad to help you with this.) Make sure you keep the beater blades on the bottom of the bowl - if you don't you will have the cake batter flying everywhere. Safety Tip Keep your free hand outside of the bowl you don't want your fingers getting caught in the beaters. |

Increase the speed to high and keep beating until the mixture is smooth with no lumps. |

Using spoons
fill the paper case about 3/4 full. Bake in the oven for about 20 - 25 minutes. Leave to cool in the pan for 5 minutes and then turn out onto a wire rack to cool compleletly before decorating. ![]() |
