An Easy Cupcake Recipe

This easy cupcake recipe for fairy cupcakes is ideal for kids who would like to make cupcakes. It is easy to do because all the ingredients are placed into one bowl and mixed all in one go.

If your kids are making this recipe I am sure that you will want some quick decorating ideas, as I am certain that they will be in a hurry to eat their creative cupcakes soon after they have been made.

Lollies are a quick and easy way to decorate cupcakes for kids, you only need to use your imagination and you can make many different decorations, here a some ideas to get you going.

 

 

Halloween Cupcakes

Halloween Cupcake IdeaWiggly Worm Cupcake

  • Cover the top of the cupcake in green frosting.
  • Make a small hole in the center of the cupcake.
  • Place seven sour worm or snake lollies (tail ends into the hole) as if they were coming out of the center of the cake, have their heads extend past the cupcake edge. If you find that they are too long just cut them down to size. Pushing the cut ends into the frosting.
  • Use some black decorating gel to give each worm some eyes.

Ghoulish Ghosts

  • Cover the top of the cupcake in black frosting.
  • Use two white milk bottle lollies for the ghosts, trimming the narrower end to make the ghost ‘tail’, place these on the black frosting.
  • Use some black decorative gel to give each ghost some eyes.

Ladybug Cupcake IdeaLadybug Cupcakes

  • Cover the top of the fairy cupcakes with bright red frosting.
  • Cut a half moon shape form a licorice strap for the head, position it close to the edge.
  • Cut a narrow strip from the licorice strap, and place this down the center of the cupcake starting from the head.
  • Place 5 mini M&M's for the wings spots on each side of the licorice strip.
  • Use some white decorative gel to make eyes.

  • Cover the top of the fairy cupcakes with blue frosting.
  • Position two yellow jelly beans in the center of the cupcake for the body.
  • On both sides of the jelly beans place two chocolate freckles for the wings.
  • Position two small yellow banana shaped lollies at the top of the head for the antennae.
  • Use some black decorative gel to make some eyes.

 

Coffee Cupcakes
This recipe makes about 20 vanilla fairy cupcakes

For the Fairy Cupcakes

2 1/2 cups self raising flour
1 cup caster sugar (super fine sugar)
150g (5 oz) softened butter
1 cup milk
3 eggs at room temperature
Finely grated zest of 1 lemon (optional)
1 teaspoon vanilla extract

Cupcakes For Kids to Make - Step by Step Instructions

Fairy Cupcakes Pre heat the oven to 180C (356F)

Line two 12 hole cupcake pans with paper cases.
Fairy Cupcakes Sift the 2 1/2 cups of self raising flour into a large mixing bowl.
Fairy Cupcakes Add 1 cup of sugar.
Fairy Cupcakes Cut the 150g (5 oz) of butter into cubes.
Fairy Cupcakes And add to the bowl.
Fairy Cupcakes Add 1 cup of milk.
Fairy Cupcakes Add 1 teaspoon of vanilla extract.
Fairy Cupcakes Add the grated lemon rind, if you are using it.





Tip

You might want to ask Mum or Dad to help
grate the rind.
Fairy Cupcakes Crack the eggs one at a time into a small bowl, and remove any pieces of egg shell before adding the eggs to the flour mix.

If you do need to take out any egg shells
use a large piece of egg shell to scoup
out the smaller pieces.  

This is easier than using your fingers or a
spoon.
Fairy Cupcakes Using an electric beater, beat at low speed
for about 30 seconds or until combined.
(Ask Mum or Dad to help you with this.)


Make sure you keep the beater blades on the
bottom of the bowl -  if you don't you will
have the cake batter flying everywhere.  


Safety Tip

Keep your free hand outside of the bowl

you don't want your fingers getting
caught in the beaters.
Fairy Cupcakes Increase the speed to high and keep beating until the mixture is smooth with no lumps.
Fairy Cupcakes Using spoons fill the paper case about 3/4 full.

Bake in the oven for about 20 - 25 minutes.

Leave to cool in the pan for 5 minutes and then turn out onto a wire rack to cool compleletly before decorating.
